People celebrate Mardi Gras because the purpose of Mardi Gras is to share food, drinks, and fun before the beginning of fasting for the Catholic holiday Lent. I think one of the most famous Carnival celebrations other than South America and Europe is in Rome and the other is in Brazil. Mardi Gras means Shrove Tuesday and/or Fat Tuesday. The biggest Mardi Gras celebration is either in New Orleans or Louisiana. They make pancakes in Britain on Shrove Tuesday. The next day, which is the day of the Lent or Ash Wednesday, everyone who is part of that celebration, they must not eat that much (or something like that) for a certain time period.
